Back in the day gleaning meant going through fields after harvest and gathering any usable leftover produce. Today, people are reviving the practice of gleaning to salvage ugly, damaged or undesirable produce. Gleaning also means gathering bits of information from different sources. Our concept brings both of these ideas together through creating tasty treats made from edible by-products usually tossed into the bin.
